Made from the nectar of Brassica napus (the bright-yellow rapeseed fields you see in spring). It crystallizes fast, almost chalk-white, and has a mild floral–buttery scent. Because its glucose level is high, it solidifies within days—a sign that it is raw and rich in trace compounds rather than "defective."

Glucose ~50–55% (very high — explains quick crystallisation and rapid glycogen replenishment). Fructose ~35–40% (lower — moderate sweetness).
